- 6 sweet potatoes
- 1 small can crushed pineapple
- 1 bag coconut
- 1 c. sugar
- large marshmallows
Directions

1Cook potatoes; drain.

2Peel and mash.

3Add sugar and crushed pineapple (drained).

4With large marshmallows cover with sweet potato mixture.

5Roll in coconut and place in buttered dish.

6Bake at 350° for 10 to 12 minutes until coconut is toasted and the marshmallows begin to burst open.

7Can be made ahead and baked later.
