  • 6 sweet potatoes
  • 1 small can crushed pineapple
  • 1 bag coconut
  • 1 c. sugar
  • large marshmallows

Directions

    Cook potatoes; drain.

    Peel and mash.

    Add sugar and crushed pineapple (drained).

    With large marshmallows cover with sweet potato mixture.

    Roll in coconut and place in buttered dish.

    Bake at 350° for 10 to 12 minutes until coconut is toasted and the marshmallows begin to burst open.

    Can be made ahead and baked later.
