- 4 skinless red snapper fillets
- 1/4 tsp. Salt and freshly ground pepper
- 2 tbsp. minced scallions
- 2 tsp. finely minced, peeled ginger
- 2 tbsp. soy sauce
- 1 tsp. sesame oil
- 2 tbsp. vegetable oil
Directions

1With your fingertips, check snapper fillets for small bones; remove with your fingertips or tweezers and discard.

2Place fillets on microwave-safe plate and season with salt and freshly ground black pepper.

3Tent plate loosely with plastic wrap.

4Microwave on high 3 minutes; turn plate and cook 3 minutes more, or until fish is cooked through and can be easily pierced with fork.

5Divide fillets among serving plates.

6Sprinkle scallions and ginger evenly over fillets.

7Drizzle soy sauce and sesame oil evenly over top.

8In small skillet, heat 2 tablespoons vegetable oil until hot but not smoking; pour hot oil evenly over fillets and serve at once.
