  • 4 skinless red snapper fillets
  • 1/4 tsp. Salt and freshly ground pepper
  • 2 tbsp. minced scallions
  • 2 tsp. finely minced, peeled ginger
  • 2 tbsp. soy sauce
  • 1 tsp. sesame oil
  • 2 tbsp. vegetable oil

    With your fingertips, check snapper fillets for small bones; remove with your fingertips or tweezers and discard.

    Place fillets on microwave-safe plate and season with salt and freshly ground black pepper.

    Tent plate loosely with plastic wrap.

    Microwave on high 3 minutes; turn plate and cook 3 minutes more, or until fish is cooked through and can be easily pierced with fork.

    Divide fillets among serving plates.

    Sprinkle scallions and ginger evenly over fillets.

    Drizzle soy sauce and sesame oil evenly over top.

    In small skillet, heat 2 tablespoons vegetable oil until hot but not smoking; pour hot oil evenly over fillets and serve at once.
