  • 8 whole Eggs
  • 1/2 cups Shredded Mozzarella Cheese
  • 1/2 cups Shredded Smoked Salmon
  • 1/2 cups Spinach
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper

Directions

    Preheat oven to 350°F. Spray muffin tin with nonstick spray.

    In a large bowl, mix all ingredients. Pour mixture about halfway full in each muffin tin.

    Bake for 25 minutes. To make sure muffins are cooked completely, poke top with a knife-tthere should be no residue on knife when removed.
