- 1/2 lb. butter, cut in 1 Tbsp. size pieces
- 3/4 c. fresh lemon juice
- grated peel of 1 lemon
Directions

1In top of a double boiler, combine all ingredients; cook and stir over boiling water until thick like pudding.

2Chill until ready to serve.

3Spread on muffins, rolls, waffles or ice cream. Keeps well in refrigerator up to 2 weeks.
