- 900 g chicken thighs
- MARINADE
- 2 limes
- 2 cm gingerroot
- 1 green chili pepper
- 6 tablespoons dark soy sauce
- 2 tablespoons soft brown sugar
- 1 teaspoon ground coriander
- 1 garlic clove
- 4 tablespoons oil
Directions

1Make 2 or 3 cuts in the chicken thighs.

2Place chicken in an ovenproof dish.

3Zest and juice the limes.

4Peel and grate ginger.

5Deseed and chop chili.

6Mix lime juice, lime zest, soy sauce, brown sugar, coriander, ginger, garlic, chili and oil.

7Pour over the chicken marinate for 2 to 3 hours.

8Preheat oven to 190 degrees Celsius/Gas 5.

9Cook skin side up for 20 minutes.

10Drain off liquid and discard.

11Increase temperature to 200 degrees Celsius/Gas6; cook for another 15 minutes.
