  • 2/3 cup Greek yoghurt
  • 1 lemon zest grated
  • 2 digestive biscuits
  • 1 3/8 tablespoons butter melted
  • 2 teaspoons lemon curd
  • 1 teaspoon caster sugar

Directions

    Place digestive biscuits in plastic food bag or bowl and crush using a rolling pin.

    Melt the butter in a jug for 30 seconds in the microwave (or in a saucepan).

    Once melted, pour the crushed biscuits in a mix well. Split the mixture into two ramekins and press firmly to create the base.

    Place ramekins in the fridge for 30 minutes.

    Place greek yoghurt, lemon curd, sugar and zest together in a bowl and mix well. Split the mixture evenly into the two ramekins and place in the fridge for a further 30 minutes or until ready to serve.

    We suggest serving with a few sliced strawberries or blueberries (or both!).
