- 7 c. thinly sliced zucchini (unpeeled)
- 1/2 c. chopped onion
- 1/2 c. Parmesan cheese
- 1/2 c. oil or slightly less
- 4 eggs, beaten slightly
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 3 large chopped garlic cloves
- dash of pepper
- 1 c. Bisquick
Directions

1Mix all the ingredients together.

2Add Bisquick last.

3Spread in greased 13 x 9-inch oblong Pyrex pan and bake until golden brown on top at 350°

4for 50 to 60 minutes.

5Cut into finger-size squares, about 40.

6Can also be used as a main coarse with salad or as a vegetable dish.

7Can be made ahead, refrigerated, then baked before serving.

8Stays well on a warming tray.
