Roast Cod with Green Sauce

  • 3/4 c. packed flat-leaf (Italian) parsley leaves
  • 2 scallions
  • 2 tbsp. olive oil
  • 1 tsp. fresh lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. Freshly ground pepper
  • 6 piece cod or scrod fillet
  • 1/4 tsp. salt
  • 1 1/2 c. diced plum tomatoes
  • 1/4 c. calamata olives (Greek olives)
  • 1/2 tsp. minced garlic
  • 1/4 tsp. Freshly ground pepper

    Heat oven to 425F.

    Lightly oil a jelly-roll pan or shallow roasting pan.

    In a blender or food processor, process sauce ingredients until smooth.

    Arrange cod in prepared pan.

    Sprinkle with salt, then spread evenly with sauce.

    Bake 10 to 15 minutes until fish is opaque in thickest part.

    Meanwhile, in a medium-size bowl, mix tomatoes, olives, garlic and pepper.

    Spoon over fish just before serving.
