Zucchini (apple?) Pie

Ingredients

  • 1 double crust pie crust
  • 3 -4 average-sized zucchini
  • 1 cup white sugar
  • 14 cup brown sugar
  • 1 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • 14 teaspoon allspice
  • 14 teaspoon salt
  • 1 12 teaspoons cream of tartar
  • 2 tablespoons flour or 2 tablespoons cornstarch

Directions

    Peel, deseed and cut zuchini into pieces.

    (Same as you would for apple pie).

    Cover with water, bring to boil for about 2 minutes.

    Drain and set aside to cool.

    Mix together the rest of the remaining ingredients.

    Mix gently with the drained zuchini.

    Put all into pie-crust lined pan, and top with second crust.

    Bake at 400 for 10 minutes, then reduce heat to 350 and continue baking for an additional 20 minutes, or until golden brown.

    Serve with vanilla ice cream, if desired.
