  • 4 Cup Peeled & Seeded Sliced Zucchini
  • 2 Tbsp. Lemon Juice
  • Salt to Taste
  • 1 1/4 Cup Sugar
  • 1 1/2 tsp. Cinnamon
  • Nutmeg to Taste
  • 1 1/2 tsp. Cream of Tartar
  • 3 Tbsp. Flour
  • 1-2 Crust Pie Pastry

Directions

    Cook zucchini in boiling water until crisp.

    Drain well.

    Toss with lemon juice and salt.

    Combine sugar, cinnamon and cream of tartar, nutmeg and flour in large bowl.

    Mix well.

    Stir in zucchini.

    Line a 9-inch pie plate with pastry.
