Ingredients

  • 3 c. zucchini, unpared and thinly sliced or grated
  • 1 c. Bisquick
  • 1/2 c. Parmesan cheese
  • 1/2 c. chopped onion
  • 2 Tbsp. snipped parsley
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 tsp. garlic salt
  • 1/2 c. vegetable oil
  • 4 eggs, slightly beaten
  • 2 (4 oz.) shredded Provolone
  • 1 tomato, peeled and wedged (optional)
  • 1/2 red or green pepper, chopped
  • 1 to 2 Tbsp. bacon, fried and crumbled

Directions

    Combine all ingredients, except Provolone, adding desired optional ingredients last.

    Spread in greased 8 x 12-inch or 9 x 13-inch pan.

    Sprinkle with shredded Provolone.

    Bake at 350° for 35 to 40 minutes or until golden and set.
