- 3 c. zucchini, unpared and thinly sliced or grated
- 1 c. Bisquick
- 1/2 c. Parmesan cheese
- 1/2 c. chopped onion
- 2 Tbsp. snipped parsley
- 1/2 tsp. salt
- dash of pepper
- 1/2 tsp. garlic salt
- 1/2 c. vegetable oil
- 4 eggs, slightly beaten
- 2 (4 oz.) shredded Provolone
- 1 tomato, peeled and wedged (optional)
- 1/2 red or green pepper, chopped
- 1 to 2 Tbsp. bacon, fried and crumbled
Directions

1Combine all ingredients, except Provolone, adding desired optional ingredients last.

2Spread in greased 8 x 12-inch or 9 x 13-inch pan.

3Sprinkle with shredded Provolone.

4Bake at 350° for 35 to 40 minutes or until golden and set.
