- 1 1/2 lb. zucchini, cut in 1/4-inch slices
- 1 1/2 lb. ground beef
- 1 onion, chopped fine
- salt to taste
- dash of oregano and garlic (if desired)
- 1 c. uncooked rice
- 1 pt. small curd cottage cheese
- 1 can mushroom soup
- 1 1/2 c. grated Cheddar cheese
Directions

1Parboil zucchini 5 minutes.

2Drain.

3Dip in cold water.

4Saute ground beef and onion and drain.

5Salt to taste.

6Add oregano and garlic if desired.

7Butter a 9 x 13-inch casserole.

8Put layer of zucchini on bottom, meat and rice next, then cottage cheese (dab here and there).

9Spread mushroom soup on top.

10Sprinkle cheese on top.

11Bake at 325° for 45 minutes.
