- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 2 teaspoons vanilla extract
- 2 13 cups flour
- 14 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups zucchini, grated
- 1 cup nuts, chopped (optional)
- 12 cup butter (softened)
- 1 (3 ounce) package cream cheese (softened)
- 2 12 cups confectioners' sugar
Directions

1Preheat oven to 350 degrees F. Grease 11x15 inch cake pan.

2In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended.

3Combine the flour, baking powder, soda and salt; stir into the sugar mixture.

4Mix in the zucchini.

5Spread the batter evenly into the prepared pan.

6Bake for 20-25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.

7Allow bars to cool completely before frosting.

8To make the frosting, blend together the butter, cream cheese and confectioners sugar until well blended.

9Spread over cooled bars before cutting.
