- 1 large zucchini about 3 to 4 lbs
- 2 med onions
- 2 to 3 red & yellow peppers
- 1 small hot pepper
- 1/2 a dozen or so of button mushrooms
- 2 tbs olive oil
- 1/2 to 3/4 cups ot italian bread crumbs
- 1 1/2 tbs sweet basil
- 1 1/2 tbs oregano
- 1/2 teaspoon red hot pepper

1{"0":"Cut the zucchini in half, and remove the seeds (discard)","2":"remove about a 1\/2 inch little of the flesh form the inside and dice it up.","4":"Dice up the onions, peppers, hot pepper","6":"Take all the Ingredients and saute them for about 10 to 15 min.","7":"Remove from the pan and set aside.","9":"Saute the mushrooms seperatly until lightly brown 5 to 6 min.","11":"Mix all ingrendants together and let it rest for about 10 min.","13":"While mixing add your herbs at this time.","15":"You will need a roasting pan 10 x 18 or larger. Put about 2 cups of water, chicken or vegatable stock in the pan.","17":"Place the zucchini into the pan face up.","19":"In your veg blend add the italian bread crumbs and mix. If you need more add a little at a time until it looks like a light sand mixture.","21":"Inside of the halfed zucchini drizzle a little olive oil in it.","23":"Put in the veg mixture into the boats and bake it in a oven of 350 degrees and cover pan with foil.","25":"Bake for about 45 min. Check on the boats to see if the flesh is softening up. When this happens your boats are almot done.","27":"For the last 10 min you can add a little more bread crumbs on top of the boats and add a little italian cheese of your choice.","29":"Let the cheese melt and turn a little brown.","31":"Take out of the oven and let it stand for a few minutes","33":"You should have made your rice.","35":"I cut the boat in about 2 inch sections.","37":"On a dinner plate put a generous helping on brown rice and place the 2 inch section of the boat on top of the rice.","39":"Take the left over stock and drizzle it on top of the rice and boat."}
