  • 6 medium zucchini
  • 1 c. fresh bread crumbs
  • 1/4 c. chopped onions
  • 1 medium tomato, chopped
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 2 Tbsp. melted margarine
  • Thinly sliced cheddar cheese

Directions

    Trim ends of zucchini. Cook covered in boiling salted water for about 10 minutes.

    Drain.

    Cut in half lengthwise.

    Scoop out center of each and chop.

    Combine chopped zucchini, bread crumbs, onion, tomato, seasonings and margarine.

    Toss lightly.

    Fill each shell, place in shallow baking dish and bake at 350 degrees for 30 minutes
