  • 2 c. sugar
  • 1 c. vegetable oil
  • 3 eggs (large)
  • 1 tsp. vanilla extract
  • 3 c. all-purpose flour, sifted
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 1/2 c. shredded, unpeeled zucchini
  • 1 1/2 c. chopped nuts

Directions

    Beat sugar, oil, eggs and vanilla in mixing bowl until fluffy. Mix flour, salt, baking soda and cinnamon.

    Add to first mixture and stir until blended.

    Stir in zucchini and nuts.

    Turn into a greased 9 x 5 x 3-inch loaf pan.

    Bake at 350° for 1 hour and 20 minutes or until done.

    Makes 2 loaves.
