Spinach Side Dish

- 5 ounces, weight Baby Spinach
- 1 Green Onion, Sliced
- 1 clove Garlic, Minced
- 1 teaspoon Soy Sauce
- 1 teaspoon Toasted Sesame Oil
- 1/2 teaspoons Toasted Sesame Seeds
- Salt To Taste
Directions

1Bring a pot of water to a boil. Add the spinach and cook for 1 minute. Drain through a fine-mesh sieve. Run cold water over the spinach to cool it down. Squeeze out any excess water.

2Put the spinach in a bowl and separate it out with your fingers. Add the green onion, garlic, soy sauce, and toasted sesame oil. Taste and add salt if needed. Sprinkle the sesame seeds on top just before serving.

3Store any leftovers in the refrigerator for up to a week.
