  • 3 c. flour
  • 1 tsp. soda
  • 1 tsp. salt (level)
  • 1/4 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 c. cooking oil
  • 1 Tbsp. vanilla
  • 3 eggs
  • 2 c. sugar
  • 2 c. zucchini

Directions

    Sift flour, soda, salt, baking powder and cinnamon together. Beat eggs in large bowl.

    Slowly add sugar, oil and vanilla.

    Beat slowly.

    Stir in zucchini (if frozen and thawed, add the extra juice).

    Add flour mixture and nuts if desired.

    Makes 2 loaves of bread or about 25 to 26 made in pot pie pans.

    Bake at 350° for 1 hour for loaves.
