  • 3 c. flour (self-rising)
  • 1 tsp. ground cinnamon
  • 1 tsp. salt
  • 3 eggs
  • 1 c. sugar
  • 1 c. oil
  • 1 tsp. vanilla
  • 2 c. grated zucchini

Directions

    Sift flour, cinnamon and salt together.

    Beat eggs until foamy.

    Add sugar, oil, vanilla and sifted dry ingredients a little at a time.

    The mixture will be thick.

    Add the zucchini; mixture will be gummy.

    Pour into two well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans and bake at 350° for 1 hour.

    Check at 50 minutes with toothpick.
