- 6 eggs, beaten until frothy
- 2 c. cooking oil
- 4 c. sugar
- 4 raw, peeled, grated zucchini
- 6 c. flour
- 2 tsp. salt
- 4 Tbsp. baking soda
- 1/2 tsp. baking powder
- 1 c. chopped nuts
Directions

1Beat eggs until frothy.

2Add cooking oil and sugar.

3Beat in zucchini.

4Sift together flour, salt, baking soda and baking powder.

5Beat dry ingredients into mixture.

6Fold in nuts.

7Turn into 4 (8 x 4-inch) greased pans.

8Bake at 320° for 60 to 75 minutes (check after 60 minutes).

9Leave in pans 20 minutes to cool, then turn out.

10Makes 4 loaves.
