Zucchini Bread

Ingredients

  • 1 c. nuts, chop nuts into medium size pieces
  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 3 1/2 c. flour
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 1 c. raisins
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 c. grated zucchini (not pared)

Directions

    Beat eggs gradually. Beat in sugar, then oil.

    Beat for 2 minutes.

    Combine dry ingredients.

    Add to first mixture alternately with zucchini. Stir in raisins, nuts and vanilla. Turn into two greased and lightly floured loaf pans (9 x 5 x 2-inch). Bake on lowest rack at 350° for about 55 minutes or until loaves test done.

    Let stand about 10 minutes.

    Turn out onto wire rack to cool.

    Dust top with confectioners sugar.

    Makes 2 loaves. Freezes well.
