- 3 eggs
- 1 c. brown sugar, packed
- 1 c. granulated sugar
- 1 c. vegetable oil
- 2 c. grated zucchini
- 1 tsp. vanilla
- 3 c. flour
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. chopped black walnuts
Directions

1Heat oven to 325°.

2Beat eggs until frothy.

3Stir in sugars, oil, zucchini and vanilla.

4Combine dry ingredients.

5Stir into zucchini mixture until well blended.

6Stir in nuts.

7Pour into 2 well-greased 9 x 5 x 3-inch loaf pans.

8Bake 1 hour.

9Cool 10 minutes in pan.

10Remove to wire rack.

11Cool thoroughly before slicing.
