- 3 eggs
- 2 c. sugar
- 1 tsp. vanilla
- 1 c. oil
- 2 heaping c. zucchini with peelings, grated
- 3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda or baking powder
- 2 tsp. cinnamon
- 1 c. nuts, chopped
- 1/2 c. dates (optional)
Directions

1Beat eggs.

2Add sugar, vanilla, oil and grated zucchini.

3Mix flour, salt, soda and cinnamon together.

4Add to egg mixture gradually.

5Then add nuts and dates.

6(If using dates, it is best to roll them in a little flour first to keep them from sticking together.)

7Grease and flour 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2-inch).

8Place mixture in greased pan and bake for 1 hour at 350°.

9Test center with toothpick for doneness. (Very good sliced and spread with cream cheese.)
