- 4 c. coarsely shredded zucchini
- 3 c. all-purpose flour
- 2 1/2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs, beaten
- 1 Tbsp. vanilla
- 2 tsp. ground cinnamon
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 1 tsp. ground cloves
- 1/2 tsp. baking powder
- 1 c. chopped nuts
Directions

1Generously grease bottoms only of two 9 x 5 x 3-inch baking pans.

2Beat all ingredients on low speed for 1 minute, then beat on medium speed for 1 minute.

3Pour in pans.

4Bake until toothpick inserted in bread comes out clean, about 1 hour, in a preheated 325° oven.

5Cool 10 minutes before removing from pans.

6Makes 2 loaves.
