  • 4 c. coarsely shredded zucchini
  • 3 c. all-purpose flour
  • 2 1/2 c. sugar
  • 1 1/4 c. vegetable oil
  • 4 eggs, beaten
  • 1 Tbsp. vanilla
  • 2 tsp. ground cinnamon
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 tsp. ground cloves
  • 1/2 tsp. baking powder
  • 1 c. chopped nuts

    Generously grease bottoms only of two 9 x 5 x 3-inch baking pans.

    Beat all ingredients on low speed for 1 minute, then beat on medium speed for 1 minute.

    Pour in pans.

    Bake until toothpick inserted in bread comes out clean, about 1 hour, in a preheated 325° oven.

    Cool 10 minutes before removing from pans.

    Makes 2 loaves.
