- 2 c. sugar
- 3 c. flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. oil
- 1 tsp. vanilla
- 3 eggs, beaten
- 2 c. shredded raw zucchini
- 3/4 c. chopped walnuts
- 1/4 tsp. allspice
Directions

1Grease 2 large loaf pans or 4 smaller pans and flour.

2Place dry ingredients in a bowl; blend and make a well.

3Mix all liquid ingredients together.

4Add to the well of dry ingredients, then add zucchini and nuts.

5Pour into pans and bake for 55 minutes at 350°, 35 minutes for small pans, 15 minutes for mini muffin pans. Cool before removing from pan.
