- 2 cups Bisquick
- 1 1/2 cups shredded zucchini (1 medium)
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 cup chopped nuts
Directions

1Heat oven to 350°F and grease the bottom of 9x5x3-inch loaf pan. Beat all ingredients in medium bowl with electric mixer at low speed for 30 seconds, scraping bowl constantly.

2Beat at medium speed for 1 minute, scraping bowl occasionally.

3Pour into pan.

4Bake 50 to 55 minutes or until toothpick comes out clean.

5Cool 10 minutes.

6Loosen sides of pan and remove and place on wire rack top side up.

7Cool completely for about 2 hours before slicing.
