Ingredients
- 2 medium zucchini
- 2 c. sugar
- 1 c. vegetable oil
- 3 eggs, beaten
- 1 Tbsp. vanilla extract
- 3 c. flour
- 2 Tbsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 c. raisins
- 1 c. chopped walnuts
Directions

1Shred zucchini to measure 2 cups; set aside.

2Cream sugar and oil.

3Add eggs, zucchini and vanilla; mix well.

4Combine flour, cinnamon, salt, baking soda and baking powder; mix well.

5Add raisins and nuts to dry ingredients.

6Combine with zucchini mixture; mix well.

7Pour into 2 greased and floured 9 x 5-inch loaf pans.

8Bake at 350° for 1 hour, or until tests done.

9Let stand 10 minutes.

10Turn out on wire rack to cool.

11Makes 2 loaves.
