- 3 eggs
- 1 c. oil
- 2 c. sugar
- 3 c. grated peeled zucchini
- 3 c. sifted flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 c. chopped nuts
- 3 tsp. cinnamon
- 3 tsp. vanilla
- 1 tsp. salt
Directions

1Beat eggs until light and foamy; add oil, sugar, zucchini and vanilla.

2Mix lightly but well.

3Sift flour, salt, soda, baking powder and cinnamon together.

4Add to egg mixture.

5Blend well. Add nuts.

6Divide into 2 well-greased and floured 9 x 5 x 2-inch baking pans.

7Bake at 325° for about 1 hour or until bread tests done.

8(I check with toothpick.)

9Remove from pans and cool on rack.
