- 3 c. flour
- 1 1/2 c. sugar
- 4 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. walnuts (and/or coconut)
- 4 Heritage eggs
- 2 tsp. grated lemon peel
- 2/3 c. salad oil
- 2 c. shredded zucchini
Directions

1In large bowl, mix flour, sugar, baking powder, salt and walnuts.

2Add coconut, if desired.

3In small bowl, beat eggs slightly.

4Stir in grated lemon peel, salad oil and shredded zucchini.

5Combine bowls; pour mixture in 2 greased loaf pans. Bake for 1 hour at 350°; let bread cool for 10 minutes before serving.
