  • 3 c. flour
  • 1 1/2 c. sugar
  • 4 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. walnuts (and/or coconut)
  • 4 Heritage eggs
  • 2 tsp. grated lemon peel
  • 2/3 c. salad oil
  • 2 c. shredded zucchini

Directions

    In large bowl, mix flour, sugar, baking powder, salt and walnuts.

    Add coconut, if desired.

    In small bowl, beat eggs slightly.

    Stir in grated lemon peel, salad oil and shredded zucchini.

    Combine bowls; pour mixture in 2 greased loaf pans. Bake for 1 hour at 350°; let bread cool for 10 minutes before serving.
