Zucchini Bread

Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 1/2 c. sugar
  • 2 c. grated raw zucchini
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 c. chopped nuts (optional)

Directions

    Beat eggs; gradually beat in oil and sugar.

    Add zucchini, cinnamon, salt, baking soda and baking powder; mix well. Gradually blend in flour, mixing well after each cup.

    Fold in nuts if desired. Pour into greased Bundt pan or two loaf pans. Bake at 350° for 60 minutes.

    Remove and store in covered tin or wrap in foil.

    Allow bread to cool for 10 minutes before removing from pan.

    Makes 12 servings.
