  • 3 eggs
  • 2 c. sugar
  • 1 c. cooking oil
  • 2 c. grated zucchini, peeled and seeded
  • 1/2 tsp. vanilla
  • 3 c. flour
  • 2 or 3 tsp. cinnamon
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1/2 c. chopped nuts

Directions

    Preheat oven to 325°.

    Generously grease and lightly flour two 8 x 4-inch or 9 x 5-inch loaf pans.

    Beat eggs until frothy.

    Stir in sugar, oil, zucchini and vanilla.

    Stir in remaining ingredients until well mixed.

    Pour batter into loaf pans.

    Bake for 50 to 60 minutes.

    Cool 10 minutes in pan; turn out onto wire rack to cool thoroughly before slicing.

    Makes 2 loaves.
