- 3 eggs
- 2 c. sugar
- 1 c. cooking oil
- 2 c. grated zucchini, peeled and seeded
- 1/2 tsp. vanilla
- 3 c. flour
- 2 or 3 tsp. cinnamon
- 1 tsp. soda
- 1 tsp. baking powder
- 1/2 c. chopped nuts
Directions

1Preheat oven to 325°.

2Generously grease and lightly flour two 8 x 4-inch or 9 x 5-inch loaf pans.

3Beat eggs until frothy.

4Stir in sugar, oil, zucchini and vanilla.

5Stir in remaining ingredients until well mixed.

6Pour batter into loaf pans.

7Bake for 50 to 60 minutes.

8Cool 10 minutes in pan; turn out onto wire rack to cool thoroughly before slicing.

9Makes 2 loaves.
