- 2 c. zucchini, chopped (no seed)
- 1 c. oil
- 2 c. sugar
- 1 Tbsp. vanilla
- 3 c. flour
- 1 tsp. baking soda
- 1 Tbsp. cinnamon
- 1 tsp. salt
- 1/4 tsp. baking powder
Directions

1Blend together first 5 ingredients.

2In a separate bowl mix next 5 ingredients.

3Slowly add dry mixture to wet mixture.

4Pour into lightly greased and floured bread pans.

5Cook at 325° for 1 hour or for muffins cook at 325° for 20 to 25 minutes.
