  • 3 eggs, beaten
  • 2 c. zucchini, chopped (no seed)
  • 1 c. oil
  • 2 c. sugar
  • 1 Tbsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. baking powder

Directions

    Blend together first 5 ingredients.

    In a separate bowl mix next 5 ingredients.

    Slowly add dry mixture to wet mixture.

    Pour into lightly greased and floured bread pans.

    Cook at 325° for 1 hour or for muffins cook at 325° for 20 to 25 minutes.
