Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1/2 tsp. baking powder
  • 1 tsp. each: baking soda, cinnamon and salt
  • 1/2 tsp. nutmeg
  • 3 eggs
  • 1 c. oil
  • 3 c. grated zucchini
  • 1/2 c. chopped, dried apricots
  • 1/2 c. chopped apple
  • 1 c. pineapple, drained
  • 2/3 c. raisins
  • 1/2 c. coconut
  • 1 c. chopped nuts

Directions

    Mix flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg in large bowl.

    Beat eggs in mixer bowl until thick and lemon colored.

    Add oil; mix well.

    Add dry ingredients; mix just until moistened.

    Stir in zucchini, apricots, apple, pineapple, raisins, coconut and nuts.

    Spoon into 2 greased 5 x 9-inch loaf pans.

    Bake at 350° for 1 hour or until toothpick comes out clean. Remove to wire rack to cool.

    Can be baked in Bundt pan.
