- 1 pkg. Betty Crocker coconut pecan frosting mix
- 2 1/2 c. flour
- 1/4 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 2 c. shredded zucchini
- 1 c. oil
- 1 tsp. vanilla
- 3 eggs
Directions

1Preheat oven to 325°.

2Generously grease and flour 2 bread pans.

3Put all ingredients in a large bowl and blend until moist. Beat 2 minutes at high speed.

4Pour into prepared bread pans. Bake 60 to 70 minutes, until toothpick doesn't stick when inserted in the middle.

5Cool 30 minutes before removing from pans.
