  • 2 1/2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 3 eggs
  • 1/2 c. oil
  • 1/2 c. orange juice
  • 1 tsp. almond extract
  • 1 1/2 c. shredded zucchini

    Beat eggs, oil, sugar, juice and zucchini.

    Combine flour, baking powder, baking soda, salt, cinnamon and cloves.

    Add flour mixture to beaten eggs, etc.

    Pour in a greased pan.

    Bake at 350° for 55 to 60 minutes in a 10-cup Bundt pan, 35 to 40 minutes in a 13 x 9-inch pan or 20 to 25 minutes in 24 cupcakes.
