  • 1 1/2 c. vegetable oil
  • 3 c. grated zucchini
  • 4 eggs
  • 1/2 c. nuts (optional)
  • 3 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. soda

    Mix sugar and oil.

    Add squash and eggs.

    Blend well.

    Sift dry ingredients and add to mixture.

    Mix well scraping bowl.

    Add nuts if desired.

    Bake in a 9 x 13-inch pan or 2 small pans which have been greased and floured for 1 hour at 350°.
