  • 3 eggs, beaten
  • 1 c. cooking oil
  • 2 c. sugar
  • 2 tsp. vanilla extract
  • 2 c. flour
  • 3 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 2 c. peeled, coarsely grated zucchini

Directions

    Combine eggs, oil, sugar and vanilla; mix well.

    Combine dry ingredients; add to oil mixture and mix well.

    Stir in grated zucchini.

    Pour batter into greased and floured 10-inch Bundt pan. Bake at 350° for 55 to 60 minutes.

    Allow to cool 20 minutes before removing from pan.
