  • 1 1/2 c. sugar
  • 1 tsp. salt
  • 1 tsp. ground nutmeg
  • 1/2 c. vegetable oil
  • 1 tsp. vanilla

    Mix together boiling water and zucchini in large mixing bowl. Add remaining ingredients.

    Bake in lightly greased and floured Bundt pan at 350° until toothpick comes out clean.
