  • 1 1/2 c. all-purpose flour
  • 2 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. baking soda
  • 1/2 c. oil
  • 3 Tbsp. light molasses
  • 2 1/2 c. coarsely shredded zucchini
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 3 large eggs
  • 1 tsp. vanilla
  • 1/2 c. pecans (optional)

Directions

    Grease a 9 x 5-inch loaf pan.

    Mix flour, sugar, cinnamon, baking powder, soda and salt.

    In a large bowl whisk oil, eggs, molasses and vanilla until blended.

    Stir in flour mixture with a large spoon.

    Then add zucchini and nuts until well blended.

    Pour into prepared pan.

    Bake for 1 hour at 350° or until done.

    Cool 10 minutes in pan.
