  • 1 1/2 c. salad oil
  • 3 Tbsp. vanilla
  • 3 c. peeled, grated zucchini squash
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 3 c. flour, sifted
  • 1 c. finely chopped nuts

Directions

    Cream together eggs, sugar, oil and vanilla.

    Add zucchini and mix well.

    Combine dry ingredients and stir into other mixture. Bake for 1 hour at 350°.
