- 1 medium zucchini
- 10 plum tomatoes or 5 to 6 regular tomatoes
- 1 Tbsp. all-purpose flour
- 1 Tbsp. sugar
- salt and pepper to taste
- 2 Tbsp. onion, minced
- Parmesan cheese, grated
Directions

1Preheat oven to 350°.

2Cut zucchini into 1/4-inch slices and halve these.

3Cut tomatoes in pieces.

4Place with zucchini in 2-quart casserole.

5Mix flour, sugar, onions, salt and pepper. Sprinkle over vegetables.

6Top with Parmesan cheese and bake for 45 minutes.
