Zucchini Casserole

  • 4 c. zucchini, peeled and diced
  • 1 medium onion, chopped
  • 1 Tbsp. Italian seasonings
  • 1 can tomatoes
  • Parmesan cheese

Directions

    Cook onion and zucchini in salt water for about 5 minutes, then drain well.

    Pour into well-greased casserole.

    Add Italian seasonings.
  4. 4
    Pour tomatoes over top of zucchini and onion.
  5. 5
    Bake at 350° for 1 hour.

    Remove from oven and sprinkle well with Parmesan cheese and return to oven until the cheese melts.
