- 4 c. zucchini, peeled and diced
- 1 medium onion, chopped
- 1 Tbsp. Italian seasonings
- 1 can tomatoes
- Parmesan cheese
Directions

1Cook onion and zucchini in salt water for about 5 minutes, then drain well.

2Pour into well-greased casserole.

3Add Italian seasonings.

4Pour tomatoes over top of zucchini and onion.

5Bake at 350° for 1 hour.

6Remove from oven and sprinkle well with Parmesan cheese and return to oven until the cheese melts.
