- 1 Tbsp. plus 1 Tbsp. olive oil, divided
- 4 oz. Monterey Jack cheese, shredded
- 1 c. mushrooms, sliced thin
- 1/2 tsp. basil
- 4 eggs
- 1/2 c. chopped onion
- 2 garlic cloves
- 2 c. zucchini, sliced thin
- 1/2 c. dried red bell pepper
- 1/4 tsp. salt and pepper
Directions

1Preheat oven to 400°.

2Grease 8 x 8 x 2-inch baking dish with olive oil.

3Saute onions and garlic in olive oil until clear.

4Add zucchini, mushrooms, red pepper and seasonings until tender.

5Beat eggs in separate large bowl; add cheese and sauteed vegetables. Pour into baking dish and bake for approximately 25 minutes or until knife comes out clean.
