Zucchini Casserole

  • 1 large zucchini (3 small)
  • 1 Tbsp. butter
  • 1/4 c. sour cream
  • 1/2 c. grated cheese
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1 egg yolk, beaten
  • 1 Tbsp. chopped onion
  • 1/2 c. bread crumbs with 1/4 tsp. sage
  • 2 Tbsp. melted butter

Directions

    Cook zucchini about halfway; drain well.

    Mix together melted butter, sour cream, cheese, salt and pepper.

    Cook on top of stove on low heat until cheese melts.

    Remove from heat and stir in onion.

    Mix sauce and drained zucchini; put into baking dish and top with remaining melted butter, mixed into bread crumbs.

    Bake at 350° for 20 minutes.
