Zucchini Casserole

  • 6 c. sliced zucchini or summer squash
  • 1/4 c. onion, chopped
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. carrots, shredded
  • 1/4 c. butter, melted
  • 1 (6 oz.) box Stove Top chicken stuffing

    Boil zucchini and onion in water for 5 minutes.

    Drain.

    Mix soup and sour cream, then add carrots, then zucchini and onion. Mix butter and stuffing mix with a fork.

    Place half of the Stove Top mix in a 9 x 13-inch baking dish.

    Then add vegetable filling. Top with remaining Stove Top mix.

    Bake at 350° for 25 to 30 minutes, uncovered.
