Zucchini Casserole

Ingredients
- 2 lb. zucchini squash
- 1/2 lb. sausage
- 1/4 c. finely chopped onion
- 1/2 c. cracker crumbs
- 2 eggs, slightly beaten
- 1/4 tsp. ground thyme
- 1/2 tsp. salt
- 1/2 c. cubed cheese
Directions

1Heat oven to 350°.

2Wash squash; trim off ends.

3Cut in chunks and cook in boiling water for 10 minutes.

4Use small squash, not over 2 pounds.

5After cooking, drain squash.

6Put onion and sausage in skillet and cook until sausage is brown.

7Drain off fat.

8Use a little of the fat to oil casserole dish.

9Combine squash, sausage, crumbs, beaten eggs, thyme, salt and half of cheese.

10Put mixture in shallow baking dish.

11Sprinkle with remaining cheese on top.

12Bake 30 to 40 minutes.
