Zucchini Casserole

  • 1 (8 oz.) pkg. Petridge herb stuffing
  • 1 stick margarine
  • 6 c. sliced zucchini
  • 1/2 c. onion (to taste)
  • 1 c. grated carrot
  • 1 c. sour cream or low-fat sour cream
  • 1 can cream of chicken soup

Directions

    Boil zucchini and onion in a small amount of water for 5 minutes. Meanwhile, mix carrot, sour cream and cream of chicken soup. Drain zucchini and fold into carrot mixture.

    Melt 1 stick margarine; add herb stuffing mix, then mix.

    Layer a casserole dish with 1/2 stuffing mix; add zucchini mixture and top with remaining stuffing. Bake in 350° oven for 20 minutes.
