- 1 large zucchini
- 1 large onion
- 2 chicken bouillon cubes
- 8 oz. cream cheese
- 1 stick margarine or butter
- 3 eggs
Directions

1Peel zucchini.

2Cut into small cubes, discarding seeds.

3In a saucepan, put zucchini, onion, bouillon cubes and 1 cup water. Cook until zucchini and onion are soft.

4Drain.

5Soften cream cheese and butter or margarine in microwave.

6Beat 3 eggs; add cream cheese and butter and beat again.

7Mix in zucchini and onion.

8Pour in 2-quart casserole and top with buttered croutons. Bake as you would a pumpkin pie at 350° for 40 to 50 minutes.
