Zucchini Casserole

  • 4 or 5 medium zucchini, sliced 1/4 inch thick
  • 3 medium carrots, shredded
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 c. sour cream
  • 1 c. seasoned croutons

Directions

    Boil zucchini until tender.

    Meanwhile saute carrots and onions in a little butter until limp.
  3. 3
    Add soup and sour cream. Add 3/4 cup croutons and zucchini, stirring gently.

    Pour into 2-quart greased casserole.

    Sprinkle remaining croutons on top. Bake at 350° for 20 to 25 minutes.
