- 4 or 5 medium zucchini, sliced 1/4 inch thick
- 3 medium carrots, shredded
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1 c. sour cream
- 1 c. seasoned croutons
Directions

1Boil zucchini until tender.

2Meanwhile saute carrots and onions in a little butter until limp.

3Add soup and sour cream. Add 3/4 cup croutons and zucchini, stirring gently.

4Pour into 2-quart greased casserole.

5Sprinkle remaining croutons on top. Bake at 350° for 20 to 25 minutes.
