- 2 lb. zucchini, sliced (about 6 c.)
- 1/4 c. onion, chopped
- 1 can cream of chicken or mushroom soup
- 1/2 c. sour cream
- 1/2 c. salad dressing
- 1 c. carrots, shredded
- 1 (8 oz.) pkg. seasoned stuffing
- 1/2 c. butter, melted
Directions

1In large saucepan cook zucchini and onion in boiling salted water for 5 minutes.

2Drain.

3Combine soup, sour cream and salad dressing.

4Stir in shredded carrots and fold in zucchini and onions.

5In separate bowl, combine stuffing and melted butter. Spread half of crumb mixture in 8 x 12-inch casserole.

6Spoon vegetable mixture over crumbs and spread remaining crumbs on top. Bake at 350° for 25 to 30 minutes.
